It is an excellent water gelling agent used to improve heat stability as well as decrease the setting time of the end product. It is also used as suspending agent. Store in a cool and dry place, free from moisture.
Ingredients: Gellan Gum
Directions to Use:
To dissolve, add desired amount of plant gel (gellan gum) powder in 1 litre of water or liquid base. Boil 85◦ to 90◦ C, stirring continuously. Once completely dissolved, add required amount of calcium ions, flavour, colour and sugar. Set at room temperature and refrigerate for long time.
