Ginger, Beans Tofu Stir Fry

This protein rice Asian Flavour is a delight for everyone. This can be served as either lunch or dinner. Easy to store can be carried even while you travel.
Ingredients
  • 1 block of firm Tofu
  • 180 gram of Rajmudi Rice /Brown Rice
  • 200 gram of green beans, roughly chopped 
  • 1 large carrot, finely chopped
  • 2 garlic cloves. crushed 
  • 2 tbsp sesame oil
  • 60 ml Soy Sauce
  • 2tbp fresh ginger grated
  • 2 tbsp jaggery powder
  • 1 tbsp cornflour (optional)
  • 1 lime juice to garnish
  • fresh coriander to garnish
  • salt to taste
Method 
  • Preheat the oven for 200 degree
  • Dice tofu to 1-inch cube and bake for 15 mins. turning occasionally. 
  • Cook brown rice as per the instructions.
  • Put soy sauce, jaggery powder and cornstarch 
  • Heat sesame oil and add carrots and beans, garlic, and ginger. Cook it for 5 minutes.
  • Add soy sauce mix.
  • Add baked tofu and stir it once to coat it with the soy sauce mix.
  • Remove from the heat. 
  • Sprinkle salt in the end as soy sauce has enough salt. Sprinkle fresh coriander leaves and lemon juice for the extra taste.
